Love a lowcountry boil??? We do! But it can be a lot of work, and it's hard to make smaller portions. Here's a twist on the classic boil, and you don't need a big pot of boiling water and a propane burner. In fact, it's cooked in an aluminum foil 'boat'... in the oven. You can also do this on the grill too.
Since the foil boats are prepared to serve one or two people, it also lets you select what goes into each foil pouch. If someone doesn't care for onions, then you can leave those out.
You can also get a bit creative by adding crawfish, or even washed oysters, because the ingredients inside the pouch are essentially steamed.
And be sure to cook a couple extras because we have a great recipe for leftovers too! This is simple, fun and oh so good!
