Makes two grilled cheeses
Ingredients
4 slices bread of choice
1/2 tbs of minced garlic
1 stick salted butter
Salt & Pepper to taste
Cajun Seasoning to taste
1 cup chopped lobster
4 slices cheese (cheddar, Colby or your favorite)
1 cup shredded cheese (cheddar, Colby or your favorite)
Directions
Combine garlic, butter, salt & pepper in a microwave safe bowl and melt. Use brush to apply to bread. In a large bowl, mix your chopped lobster with Cajun seasonings. Toast bread on the griddle while you cook your lobster. Split the lobster into two bread-sized servings.
After the first side of the bread toasts, flip and add your two slices of cheese while the other side of the bread toasts. Flip your lobster cooking though then add to the piece of bread that has cheese on it. Add the other slice of toasted bread to the top of the lobster so now your sandwich is assembled.
Sprinkle shredded cheese on to the griddle in rectangle shape and set sandwiches on top to melt the shredded cheese and wait til it crisps up. Do the same to the other side.
